Roast tomato, buffalo mozzarella and puy lentil salad

I had never cooked Puy Lentils until I made this salad. We have recently just moved into a new kitchen and the dried pulses now stand proud in kilner jars so that I can actually see them! The Puy Lentils sat neglected at the back of the cupboard in our old kitchen for so long – so I decided that it was time to put them to good use. I roasted a whole chicken, along with some potatoes and served it with this salad. I roasted the tomatoes first in balsamic glaze, extra virgin olive oil and Cornish Sea Salt. There was also enough left over the lunch the next day, which was a huge bonus! Ingredients – serves 4 as a main or 6 as a side 200g Puy Lentils 2 tbsp fresh dill, chopped 3 tbsp fresh chives, chopped 1 small red onion Glug of extra virgin olive oil 5 vine ripened tomatoes Drizzle of balsamic glaze Cornish Sea Salt 1 ball of good quality Buffalo Mozzarella A few sprigs of rosemary Glug …

Glorious soup competition

At the tail end of last year I entered the Glorious Soup competition with a few fellow bloggers. The task? Create your own Brazillian inspired soup recipe. The prize? The winners soup would make it into the Glorious range. Pretty cool. So I set to work on my recipe and after a bit of research had a soup that fit the bill. It consisted of Chicken, Quinoa, Sweet Potato, Coconut Milk and Spices. The competition itself was fun – I made it down to the final 5 alongside Charlie Nelson (Eat My Nels), Michelle Minnaar (Greedy Gourmet), Carla Spuri (Can be bribed with food) and Danny Kingston (Food Urchin). I was invited to the cook off where our soups were judged by Lee Bennett, Head Chef at Le Pont de la Tour, Karen D’souza (a massive fan of the brand), food writer, broadcaster and photographer Tim Hayward and Matthew Owen from Cool Earth. We arrived at the kitchens and it felt like a smaller scale Masterchef – our cooking stations were all set out for …

Crayfish and Mushroom Risotto recipe

I bought a tub of Crayfish tails when I was trying to do my 6 weeks without sugar. I was going to use them for a salad but after giving up (let’s face it I only lasted 6 days!), salads weren’t high on the agenda anymore. So I decided to cook a Crayfish and Mushroom Risotto. I didn’t have any fish stock in the store cupboard so I used Vegetable Stock instead but it was still absolutely delicious. Risotto is so easy to make, although you do have to keep stirring the pan so that it doesn’t stick but it’s a delicious treat. Ingredients (Serves 4) 20g butter 1 red onion, finely chopped 1 clove garlic, crushed handful chestnut mushrooms, chopped in half 250g 100ml dry white wine 1 pint vegetable stock (I used Bouillon) 225g cooked crayfish tails 2 tbsp double cream 2 tbsp freshly grated parmesan salt and freshly ground black pepper 2 tbsp flatleaf parsley, chopped Method 1. In a large frying pan, melt the butter and sauté the onion until translucent …

Hummus Bros, Soho

I have long been a fan of Hummus Bros. I used to go at least twice a week when I was interning at a nearby company during university. It was a sad affair when I left that company to start my career – the lunch options in Shoreditch weren’t so great! I love this Cafe/Restaurant because it serves one of my favourite foods with a range of hot and cold toppings along with delicious toasted Pitta Breads. Their secret Hummus recipe is faultless – smooth and absolutely delicious. It is served smothered around the side of a dish (two sizes available, small and regular) and the topping is placed in the middle. Depending on what size dish you order, you will be served with either one or two Pitta breads. I have always opted for the Vegetable Salad because I just love the crunch of fresh Red Peppers, Red Onion, Cherry Tomato and Cucumber with the smoothness of the Hummus. I’ll also add a dollop of their freshly made Green Chilli and Coriander relish and …

Split Red Dal, Chicken with Fenugreek leaves, Chapati and Paneer in Tomato Sauce Recipes

Curry curry curry. If you would have asked me a year ago what my favourite food was, I would have said pizza. I know what you’re thinking – everyone else used to think it to. And although I still love the humble crispy tomato and cheesy feast, curry has since fast taken over the top spot. I live in a predominantly Indian area of London and because of this, the high street is rich with Indian supermarkets, fashion stores and cutlery shops. Rather than take our usual Sunday trip to Waitrose last weekend, we decided to head to Ealing Road and indluge in some Indian cooking. I bought the India Cook Book when it came out and it has been sitting on the shelf for quite a while so I decided it was time to put it to use. There are 1000 recipes in the book but we whittled it down to 4. We chose Tamatar Chaaman (Paneer in Thick Tomato Sauce), Methi Murg (Chicken with Fenugreek Leaves), Masoor Dal (Split Red Dal) and Chapaati. …
